Chicken Asado

Ingredients:
  • 1/2 kilo chicken thigh fillet (or you can use other chicken parts you prefer, this amount of filleted chicken is approximately equivalent to 1 small dressed chicken)
  • 1/4 cup soy sauce
  • 8 pcs. calamansi
  • 1/2 tsp. ground balck pepper
  • 1/4 cup olive oil
  • 7 cloves of garlic
  • 1 large white onion
  • 6 pcs tomatoes
  • 1 bay leaf (or dahon ng laurel)
  • 4 medium potatoes, quartered and fried
How to cook it:

Marinate chicken in soy sauce, calamansi and pepper.

Saute garlic in olive oil.  When golden, remove from pan and set aside.  Similarly, put in onion, saute until transparent and set aside.  Do the same for the tomatoes.

Cook chicken in the same oil until brown on all sides.  Then add back the garlic, onions, tomatoes and marinade.  Add bay leaf and cover.  Simmer for 20 minutes, then add pre-fried potato.  Simmer for another 10 minutes.

My Story:

It's been a while since I last cooked food in our home.  I was again inspired to cook food because our new yaya does not cook well enough to satisfy our all too simple palate.  I have decided to teach them how to cook for a number of reasons. 

(1) The kids are not eating well, or sometimes not eating at all. 

(2) Me and my husband always brings packed lunch to office so we can cut down expenses.  However, we discovered we're actually spending more during those times that we were unable to eat the food that we brought.

(3) We want to come home after a long stressful day at work to a home with great food on the table and the great news that the children had been well fed.

That being said, I cooked the above recipe with success!  If only my husband was home, it would have been a whole lot happier on my part to eat with him.

Anyway, I hope yaya gets to remember how to cook it moving forward.  If not, I don't mind cooking this recipe again.
