Christmas Gelatin Cake

Ingredients:
  • 4 cup applesauce
  • 1 box green gelatin
  • 1 box red gelatin
  • 1 can M.Y. San graham crackers

Whipped cream ingredients:
  • 1 cup heavy cream
  • 1 tsp. vanilla or 1 Tbsp. sugar

How to prepare:

Red gelatin mixture:
In a bowl, mix 1 box of lime gelatin powder with 2 cups of applesauce.  Mix well.

Green gelatin mixture:
In a separate bowl, mix 1 box of raspberry or cherry gelatin powder also with 2 cups of applesauce.  Mix well.

Layering the cake:
In a rectangular dish lay down one layer of graham crackers, leaving space on the sides of the dish for the whipped cream.  Spread a generous layer of green gelatin on top of the crackers and put another layer of graham crackers on top of that.  This time spread a layer of red gelatin and top it with another layer of graham crackers.  Keep making layers up to your desired height, make sure to top off the cake with a final row of graham crackers.

For the whipped cream, chill the heavy cream, a stainless bowl, and the beaters in the refrigerator before use (a couple of hours, or longer, if possible).  The colder all items are, the faster the cream whips.

Pour 1 cup of cream and 1 tsp. vanilla (or 1 Tbsp. sugar) into the bowl and beat at medium speed till the mixture starts to froth, then increase to high and continue whipping till done.

Spread the the whipped cream over and around the cake.  This helps moisten the layers of graham crackers.  Cool overnight before serving.
