Pork Royale

Ingredients:
  • 500g pork, sliced thinly
  • 200g can pineapple tidbits (reserve syrup)
  • 12 stalks of asparagus
  • 5 cloves garlic
  • 3 Tbsp oil
  • 1 onion
  • 4 tomatoes
  • salt and pepper to taste
How to cook it:

Saute garlic, onion and tomatoes in a pan.  Add pork, saute a little. Season with salt, pepper and a few drops of Knorr liquid seasoning (optional).  Cover the pan, and let the pork cook over low fire.   Add 1.5 cups of water and the pineapple syrup.

Once pork is tender add  pineapple tidbits.  Cover and let it cook for another 5 minutes.

Add asparagus, cover the pan and let it cook for another 2 minutes.  Turn off the heat and let it stand until serving time. 

Serve hot.

I thought of serving this dish to my kids today because I remembered serving the same dish to my siblings way back in college days.  And I know they liked the dish. 

This was something I learned from Del Monte Kitchenomics.  But this time, I changed the recipe a little.  The recipe uses baguio beans but Erick doesn't like the said vegetable.  So I used asparagus instead, and I'm glad I did.  The asparagus complemented the dish better.

I'm glad my kids liked it.
